Next to Skirt steak, Hanger is my favorite cut of meat. Also known as "butcher's steak" because butchers would often keep it for themselves rather than offer it for sale, Hanger, together with Mrs. Baya's garnish and arroz con gandules make a meal fit for a king, or Pharaoh.
